Peach + Tomato + Burrata Salad

I was so surprised when people said they were interested in this “recipe”. It’s one of my favorite combinations for Summer and beyond easy to make. I won’t call it a recipe because I literally just eyeball everything. You can’t mess it up! We used the tomatoes and peaches we got in Madison, GA from Farmview Market. They were fresh, juicy, and worth the 1-hour drive. HAH! If you are local to Atlanta, I would recommend using the produce from Lucy’s Market. They source from the best farmers all over Georgia and the southeast. 


Ingredients 

  • Arugula 

  • Tomatoes (I like Yellow, Red, Brown, and Ugly - get them from somewhere good like a farmer’s market, Lucy’s Market, or roadside stand) 

  • Fresh Peaches  (same as above) 

  • Prosciutto 

  • Burrata 

  • Salt & Pepper 

Dressing 

  • Olive Oil 

  • Balsamic 

  • Garlic 

  • Lemon 

  • Dijon Mustard 


Directions

  • Dress your arugula with the dressing above. I eyeball it and whisk it together. 

  • Line your serving dish with tomatoes and peaches alternating leaving a hole in the middle for the arugula. 

  • Put dressed arugula in the center 

  • Top with burrata + prosciutto 

  • Salt and Pepper to taste 

  • I like to let it chill in the fridge for 30 minutes or so 

  • Drizzle with more balsamic/olive oil if desired 

  • Voila! Serve this beautiful Summer salad…but do it quickly tomatoes and peaches are only in season and taste this delicious for so long.
