Beer Cheese Dip

I partnered with The Dairy Alliance to showcase one of my favorite #homegating (tailgating at home) snacks. (The Dairy Alliance is a nonprofit funded by dairy farm families of the Southeast. They work diligently with dairy farmers, schools, sports teams, health professionals, local organizations, state leaders, the media, and the public to promote dairy foods and knowledge about the dairy industry.) We all know I love a good glass of milk (I used to collect GOT MILK posters when I was a child)… can we bring that back?

Here is the recipe below. Don’t skimp on the ingredients (no low-fat options). If you are going to make the beer cheese - eat the good beer cheese!

Ingredients

  • ¼ cup butter (salted) - I used Kerrygold

  • ¼ cup flour

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ⅛ teaspoon cayenne pepper

  • 1 cup whole milk

  • ⅔ cup beer

  • 2 teaspoons spicy brown mustard

  • 1 cup sharp cheddar

  • ½ cup mozzarella cheese

  • ½ cup gruyere

Instructions

  • Melt the butter, flour, onion powder, garlic powder, and cayenne pepper over medium heat in a saucepan for about a minute

  • Stir in beer, milk, and mustard until it’s creamy. Continue cooking over medium heat until thick and bubbly.

  • Reduce to low heat, add cheeses and stir it around until it thick and dippable! :)

  • I served with pretzel bites that I found at Whole Foods. You could be skinny and serve with veggies too!
